Getting Crafty - Succulents

Succulents are the best little plants - ever. They are very easy to take care of, even if you don't have a green thumb. These wonderful plants don't require water on a daily basis. Just warm temperatures, and sunlight!

I decided to get a little creative with my lovely little plants, spray paint, and a few potters. I taped off the areas I wanted to spray paint with some painters tape, and very lightly sprayed the pot. You should spray from a far distance, or the spray paint will start to bubble. This was a mistake I learned the first time doing this.

Super easy for a summer craft, and not expensive either!

Tomato & Red Onion Salad

I love fresh tomatoes! The other day we were grilling out, and I wanted to make a healthy veggie salad. Looking around my kitchen, I found tomatoes, and red onion. Such a great combo!
  • one pint tomatoes 
  • one medium red onion
  • 1/4 cup olive oil 
  • 1 teaspoon basil 
  • salt & pepper to taste

  1. cut tomatoes in to thirds
  2. cut red onion into slivers
  3. mix 1/4 cup olive oil, 1 teaspoon basil, and salt and pepper in mixing bowl
  4. chill for about 20 minutes in refrigerator 
  5. serve and enjoy!

Peanut Butter Banana Oatmeal Cookies

I love recipes that are really easy, and don't require a lot of ingredients. Most of these ingredients you might have in your pantry! 
  • 3 ripe bananas
  • Two Tablespoons Peanut Butter
  • One Cup Quick Oats
  • Two Tablespoons Brown Sugar
  • 1/4 Cup Olive Oil
  1. Mash bananas
  2. Mix all ingredients with mixer until texture is smooth
  3. Spoon mixture into tablespoon size balls (it really doesn't have the consistency to form balls, but you get the idea) onto parchment paper 
  4. Bake for 20 minutes 350 degrees
  5. Let cool, and enjoy!  


Red Lips are the Best Lips

I am obsessed with red lips, and the perfect cat eye. e.l.f. makes the perfect red lip color - Studio Matte Lip Color in Rich Red. I love wearing this shade under e.l.f.'s Essential Luscious Liquid Lipstick in Ruby Slipper - $1.00!

The only dislike I have with the matte lip color is it doesn't last very long. This is something you will need to apply a few times a day, but it's not bad for $3.00.

Herb Mashed Potatoes

I love mashed potatoes, and cannot wait until Thanksgiving! It's the perfect side dish for any comfort food!
  • 7 - 8 russet potatoes cleaned & peeled
  • 1 cup 1% milk
  • 6 tablespoons butter - I used Earth Balance Soy Butter Spread
  • Sea Salt 
  • Pepper 
  • 1 Tablespoon Tarragon 

  1. After cleaning, and peeling the potatoes I let them soak in cold water for about an hour.
  2. Next, I added ground sea salt to the water, and boiled for about 20 - 30 minutes (until soft).
  3. After draining the potatoes, I took a fork and cut the potatoes into half to make it easier to blend with the mixer.  
  4. Add milk, butter, salt & pepper, and tarragon.  I didn't measure the salt and pepper, I just added, and then tasted the potatoes as I was blending.  
  5. Mix the potatoes on low speed until they are nice and fluffy.

Whole30 Paleo Baked Salmon

If you ever do the Whole30 Challenge (I completed back in May 2013), you should really try my baked salmon recipe it's delish! After eating a lot of bacon, beef, and chicken, I tried introducing fish a couple nights a week.
  • two wild caught salmon filets (I used Wegman's Wild Caught Salmon)
  • one lemon
  • one tablespoon basil
  • one tablespoon olive oil
  • salt & pepper to taste 
  1. Preheat oven to 350
  2. Slice lemon 
  3. Mix basil, olive oil, and salt & pepper
  4. Rub mixture on salmon filets
  5. Top salmon filets with lemon slices
  6. Bake for 20, or until fish is flaky 
  7. Enjoy!

Paleo No Bake Brownie Bites

I need sweets. Not all the time, but I need something other than cake to cure my sweet tooth. Sometimes I purchase the Lara Bars, but it can get kind of expensive. These brownie bites are so yummy! My hubby was even impressed. The best part is they are super easy to make, and you don't have to bake them!
  • 1 cup pitted dates
  • 1/3 cup unsweetened cocoa powder
  • 2/3 cup almond slivers
  • 1/3 cup sweetned coconut flakes
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey
  1. Combined cocoa powder and almond slivers in food processor until finely chopped
  2. Add dates, vanilla extract, and honey to the mixture
  3. Mix on medium speed until the mixture becomes thick - about one minute
  4. Remove the mixture into a bowl, and let sit in the fridge for about an hour
  5. After the mixture is cold, roll the mixture into one inch balls using your hands
  6. Once you have rolled the mixture into balls, roll them into the coconut flakes
  7. You can enjoy them, or you can keep them in the fridge for snacking later!

So yummy, easy, and inexpensive!

Paleo Fried Chicken

So, I have had a SERIOUS craving for fried chicken. Serious. I love fried chicken, and I haven't had it in forever. I decided to make my version of paleo fried chicken. It was so delicious!!
  • two chicken breasts (orgainc) 
  • one cup almond flour
  • 1/4 cup coconut flour
  • one egg
  • one tablespoon garlic powder
  • one tablespoon paprika
  • 1/2 teaspoon cayenne powder
  • salt & pepper 
  • one heaping tablespoon coconut oil  

  1. cut chicken breasts into tenders
  2. scramble egg on large plate (you can add hot sauce to the egg if you want your fried chicken to have a spicy taste)
  3. heat coconut oil in frying pan
  4. mix almond flour, coconut flour, garlic powder, paprika, cayenne powder, and salt & pepper on large plate
  5. dip chicken tenders in egg, and the into the mixture of ingredients 
  6. fry chicken in coconut oil until chicken is fully cooked
  7. enjoy!!

Who's Ready for Fall Fashion?

This year has flown by, and soon fall fashion will be here. Nothing feels like fall is around the corner like the Nordstrom Anniversary Sale! When I saw the preview catalog online, I sat and made my list of musts. It was like I was a child again making a Christmas list. Then there was the wait. Waiting for the sale to start online. Nothing feels better than the best sale of the year, and payday. All in one day. As soon as I got to work, I logged on, and bought a new pair of Dolce Vita Mani Booties.
