Stuffed Peppers | Paleo & Whole30

I love stuffed peppers. They are so easy to make, and very filling.
  • six stuffed peppers, cleaned and tops removed
  • one tablespoon garlic
  • 1.5 pounds ground beef - I use COSTCO brand organic ground beef
  • one jalapeno, cleaned and diced
  • salt & pepper to taste
  • one can of diced southwest style tomatoes 
  • one small yellow onion, diced

  1. Preheat oven to 350 degrees
  2. Brown ground beef, onion, jalapeno, garlic, and salt and pepper
  3. Once the ground beef is cooked, add the can of diced tomatoes
  4. Let the beef mixture simmer for five minutes
  5. Add the beef mixture to the stuffed peppers
  6. Bake for 35 minutes
  7. Enjoy!

  1. This is how I like my stuffed peppers, too! But sometimes I use ground turkey instead of beef since it's a little lighter on the stomach!

  3. Oh my goodness I've been looking for a healthy and easy stuffed pepper recipe. AND I wanted to do Whole30 but didn't want to pay for it, haha. So thanks for sharing! :)

    1. You're welcome! Whole30 was really hard at the beginning, but I started doing Paleo 80/20, and then set a date to start Whole30. After day three it gets better! Enjoy :)
