Refreshing | Citrus Infused Water

I love starting off my mornings with infused waters! This morning I had orange, lemon, and lime infused water. I just cut off a few slices from each, and added to my ice water.

Dairy Free Coffee Ice Cream Float

Hello, pure deliciousness! Coffee and ice cream - COFFEE and ICE CREAM. That's all. Oh, and it's all Paleo.
  • 4oz Chameleon Cold Brew Black Coffee (don't worry Chameleon Cold Brew has the measurements on the side for easy pouring!)
  • 3/4 cup So Delicious Vanilla Ice Cream
  • 1 glass chilled in the freezer 

Add your ice cream to the chilled glass, and pour 4oz of the cold brew coffee over the ice cream. Enjoy!

Taco Tuesday | Tomatillo Salsa Verde

While shopping at our local farmer's market on Sunday, I picked up some tomatillos. I really love tomatillo salsa verde, and it would be a nice change to our Taco Tuesday dinners. I found a really awesome, and easy Tomatillo Salsa Verde recipe on allrecipes.com. This was really easy to make, and it made enough for a few dinners. I am really starting to get the hang of canning too!

Overnight Blueberry Chia Pudding

Good morning!! Happy Monday! Last night I made delicious overnight blueberry chia pudding. If you are looking for a Paleo breakfast that takes almost zero time to make, you should try this!
  • one can of full fat unsweetened coconut milk
  • 1/4 cup chia seeds
  • 1 cap full of pure vanilla extract
  • blueberries
Mix all ingredients into a mason jar, and let sit overnight in the fridge! Enjoy!

Agua de Sandia

I love everything summer, and refreshing. Watermelon is one of my favorite summer fruits, and you can do so many things with it! I decided to make a agua de sandia - such a refreshing drink during those hot summer days! It's super easy to make, and it's a nice treat when you are craving something cold and sweet.
  • two cups of chopped watermelon (maybe a little more)
  • a few ice cubes
  • juice from half of a lime
  • stevia (I just used one packet of stevia)
Mix all ingredients into a blender, and blend until frothy - enjoy!!

Arugula Breakfast Salad

If you are looking for something different to try for breakfast - or really any meal - I really love a poached egg on arugula! I really love the taste of arugula, and it goes really well with my Spanish Olive Oil from Trader Joe's! This is also a great Whole30, and Paleo approved meal.

I just poached an egg - there are so many easy recipes on how to poach an egg on the internet! I added a handful of arugula to a bowl, seasoned with olive oil, and salt and pepper. I placed the poached egg on the salad, and seasoned the poached egg with salt and pepper! It took less than ten minutes, and it was really yummy!!

Paleo Shrimp Salad

Nothing like enjoying a great seafood meal during the summer! Last night I decided to make a Paleo friendly shrimp salad. I bought a pound of shrimp from Relay Foods, used the basic stuff we had in the kitchen, and fresh basil from my garden. It was super easy to make!
  • one pound peeled and chopped steamed shrimp
  • four hard boiled eggs, peeled and chopped
  • 1 1/2 cup diced boiled red potatoes
  • 1/4 cup spicy mustard
  • two tablespoons olive oil
  • about three fresh basil leaves chopped
  • salt & pepper
Once you have everything chopped, mix all the ingredients into a bowl, and let sit in the fridge for about an hour or so. Next time, I will be adding some onions!

Tea Tree + Coconut Oil Overnight Treatment

I have been reading a lot on essential oils lately, and all the benefits they can provide. So, I picked up a few basic ones from Wegman's. I found a really simple and easy overnight facial treatment on the Free People Blog, and decided to give it a try before bed tonight. All you need is tea tree essential oil, and coconut oil. Add a few drops to a tablespoon of coconut oil, and mix until a clear serum is formed. Next apply to your face, and wash off in the morning. Seems really simple!

Tea Tree oil is a good for redness, and acne. I don't have acne, but I do have some redness in my skin. I am all about less chemicals, and trying a more holistic approach to my beauty routine!

OGX Repairing Awapuhi Ginger Shampoo and Conditioner

I had to immediately review this new shampoo and conditioner that I picked up at Target. Things that I enjoy: new shampoos and conditioners. OGX (formerly Organix) Repairing Awapuhi Ginger shampoo and conditioner smells amazing. It really makes my hair soft, but doesn't make it feel greasy. I don't color my hair as much as I used to, but I do blow dry, curl, and straighten. I don't have super dry or damaged hair, but it could use some help. If your hair needs some repairing, I would really recommend this product!

Another plus to this brand - they don't test on animals and it's paraben free!

Happy National Honey Bee Day!

Today is National Honey Bee Day! So, I decided to dedicate a post to the bees! I am all for saving the bees! My backyard is full of pollinators, and they love my sunflowers. I even feed the bees watermelon rind, and created a bee bath from them!


P+C Healthy Post | Cantaloupe & Infused Water

I love infused waters! If you drink a lot of water like me, and don't drink sodas, I really recommend infused water! This morning I had a bowl of fresh cantaloupe from the farmers market, and basil and lemon infused water. I just picked a few basil leaves from my garden, sliced a few lemon slices, and added to my iced water. I could drink infused water all day long!

Canned Tomatoes

If you have tons of tomatoes from your garden, or the farmers market, you should can them for your fall recipes! We make a lot of chili for football Sunday's, so I figured I would get started, and can tomatoes!

I found a very simple recipe on Yum Sugar's website! It was really easy, and there are step-by-step instructions with pictures. Canning isn't something that I have done often, but this is something a beginner can do! I bought a very basic canning kit on amazon.com , and it wasn't expensive at all!

Cannot wait for fall, football, and chili!!

Trader Joe's Cooking Oil

If you are looking for Paleo approved cooking oils, I really recommend Trader Joe's brand! We were running low on olive oil and coconut oil, so I stopped at the Trader's Joe's by work. They had a HUGE selection of olive oils! I decided to try their Spanish Extra Virgin Olive Oil, and Coconut Oil. These will be my two go to cooking oils. I really love their Spanish Extra Virgin Olive Oil! I don't do a lot of cooking with coconut oil, but I use it more for oil pulling, and deep conditioning my hair - that will be another blog post :) !

I have never really shopped at a Trader Joe's, but their employees were very helpful. Also, I didn't find their stuff to be super expensive either. I only purchased the two items, but I didn't even spend $15. Which isn't bad, since I know I would have spent more at other grocery stores.
