Arugula Breakfast Salad

If you are looking for something different to try for breakfast - or really any meal - I really love a poached egg on arugula! I really love the taste of arugula, and it goes really well with my Spanish Olive Oil from Trader Joe's! This is also a great Whole30, and Paleo approved meal.

I just poached an egg - there are so many easy recipes on how to poach an egg on the internet! I added a handful of arugula to a bowl, seasoned with olive oil, and salt and pepper. I placed the poached egg on the salad, and seasoned the poached egg with salt and pepper! It took less than ten minutes, and it was really yummy!!
