Paleo Shrimp Salad

Nothing like enjoying a great seafood meal during the summer! Last night I decided to make a Paleo friendly shrimp salad. I bought a pound of shrimp from Relay Foods, used the basic stuff we had in the kitchen, and fresh basil from my garden. It was super easy to make!
  • one pound peeled and chopped steamed shrimp
  • four hard boiled eggs, peeled and chopped
  • 1 1/2 cup diced boiled red potatoes
  • 1/4 cup spicy mustard
  • two tablespoons olive oil
  • about three fresh basil leaves chopped
  • salt & pepper
Once you have everything chopped, mix all the ingredients into a bowl, and let sit in the fridge for about an hour or so. Next time, I will be adding some onions!

  3. It was so easy! No mayo, just eggs and olive oil, and mustard. It was yummy, but next time I will add onion for some crunch :)
