Nothing like enjoying a great seafood meal during the summer! Last night I decided to make a Paleo friendly shrimp salad. I bought a pound of shrimp from Relay Foods, used the basic stuff we had in the kitchen, and fresh basil from my garden. It was super easy to make!
one pound peeled and chopped steamed shrimp
four hard boiled eggs, peeled and chopped
1 1/2 cup diced boiled red potatoes
1/4 cup spicy mustard
two tablespoons olive oil
about three fresh basil leaves chopped
salt & pepper
Once you have everything chopped, mix all the ingredients into a bowl, and let sit in the fridge for about an hour or so. Next time, I will be adding some onions!
