Roasted Rainbow Carrots

If you are looking for a simple dish for your Thanksgiving meal - try roasting carrots. They taste like candy, and it's super easy to make too!

  • one bunch of carrots cleaned, and sliced down the middle
  • extra virgin olive oil
  • sea salt & pepper
  1. preheat oven to 425 degrees
  2. place the sliced carrots on a baking dish covered in parchment paper
  3. drizzle with extra virgin olive oil
  4. sprinkle sea salt & pepper
  5. bake for 15 - 20 minutes
  6. enjoy!
