Grill Chicken & Veggies | Whole30

It's that time of year to start grilling! My husband is teaching me how to master the art of grilling, and I am really excited about it!

The other night we made grilled chicken, and fresh veggies on the grill. Since I am a big Paleo foodie, I like to make my recipes easy, not to many ingredients, and easy on the wallet.

What you will need:
  • four chicken breasts
  • zucchini
  • onions
  • salt & pepper
  • olive oil
  1. I marinated my chicken breast that morning in a plastic bag with salt, pepper, and olive oil.
  2. Wash, and slice your veggies, and put onto a bamboo skewer. I then drizzled olive oil, and sprinkled salt and pepper over the veggies.
  3. Start prepping your grill - we use charcoal.
  4. Once you grill is ready, place your marinated chicken breast on the grill. We waited until they were half way done, and then placed the veggies on.
  5. After you chicken and veggies are done grilling, remove from grill, and enjoy!
Super easy, inexpensive meal, and Whole30 approved!

Avocados!

After starting Paleo in 2013, I fell in love with eating avocados! They are a great side to sub for any carb dish. I ate avocados as a side for mashed potatoes, rice, and pasta. They are great to eat with eggs, salads, and using as a mayo substitute for chicken salad.

They have a lot of health benefits too! They can help with preventing cancer, and heart disease. Not only are they good for your body, but you can use them as a deep conditioning mask for your hair, and a facial for your face.

BluePrintJuice | Review

Delicious, and refreshing. I love BluePrintJuice! I guess juicing is all the craze right now, and after completing my second Whole30, I decided to try a few of the juices. The first one that I started off with was the kale, apple, ginger, romaine, spinach, cucumber, celery, parsley, and lemon cold pressed juice. Before taking the first sip, I didn't know what to expect. All those fruits, and veggies into one 16oz. bottle?! Six pounds of fruit, and veggies to be exact. I braced myself for something horrible, and me to gag. Surprisingly it was really good! I have replaced a few meals with a juice, but it can get kind of pricey. They run about $9 a bottle at Wegman's depending on the flavor. You can also subscribe, and do the cleanse on their website, and have the product sent to your home.

These juices are cold pressed, 100% raw, and organic.

I also tried the lime, ginger, lemon, and agave. This one tasted like lemonade, and was really refreshing after doing a 5k walk!

Country Life Maxi-Hair | Review

Now that spring is here, and I am working out a lot more, I cannot wash my hair twice a week anymore. I have started to wash my hair daily, and to maintain the growth I started to take a multivitamin. Country Life Maxi-Hair multivitamins are really the best! My nails have grown so fast, and don't break. My hair seems to be growing a lot faster, and it feels thicker. I can't really say if it's helping my skin - I really don't break out. I take one vitamin in the morning, and one before bed. They are kind of big pills, so I have to chug a lot of water to get them down. I really recommend buying them, and they aren't bad for the price - $14.29 at www.vine.com, and they are gluten-free!

Whole30 - Week Four & Completed

So, I completed my second Whole30 challenge!! I started Paleo 100% March 1, and decided to do the challenge March 9th. I feel really good, and really don't want to reintroduce anything back into my diet. I feel like dairy, and wheat really make me bloated. My starting weight was 149.8, and my ending weight was 140.8. My skin looks really good too!

Rimmel London Scandal Eyes Eyeliner - Review

Ladies! Let me introduce you to the most needed item in your makeup bag - Rimmel London Scandal Eyes Waterproof Kohl Eyeliner in nude. I have never owned anything from Rimmel London, but after seeing this recommended by a lot of beauty bloggers, I really wanted to give it a try. After just having a baby, and lack of sleep, I needed something that would brighten my tired eyes. This absolutely does the trick. Hands down the best $3.49 I spent at Target in a long time. I apply this to my waterline, to give my eyes a brighter look.

It goes on very smooth, but I am not a fan of the casing. It's really hard to sharpen. Other than that I really don't have any complaints. I have tried using a white eyeliner before, but the nude works better for me.

I would like to try out more of the Rimmel London brand. Can anyone recommend a good lipstick?

Whole30 - Salmon & Brussels Sprouts

Last night I made the best grilled salmon, and brussels sprouts. I am still doing Whole30, and I wanted to change up my last few meals. I love my Grilla gill pan from Ikea. It's not bad for $15, and it does get you through the cold winter nights when you can't grill.

It was really simple to make too!

  • two wild caught salmon fillets (I do not eat farm raised seafood)
  • two handfuls of brussels sprouts
  • olive oil
  • salt & pepper
  • basil
Serves Two
  1. I am not big on measuring (that's probably why I am not interested in baking) so I drizzled olive oil, and sprinkled salt, pepper, and basil on the salmon. Heat the grill on the burner, and place the salmon with the edible part on the grill. Cook for about five minutes, and then flip. Cook the skin side down for about five minutes.
  2. While your salmon is cooking, heat about two tablespoons of olive oil in a pan, and then add your brussels sprouts. I then season them with salt and pepper. Once the brussels sprouts get kind of crispy on the edges, I remove them from the pan.

Really simple, and really yummy!
