Spicy Kale Chips

I am so excited for all the kale at the farmer's market!! I wanted to share an old recipe on how to make kale chips.

You can do so many flavors when making kale chips. They are super easy to make, and they are a great snack. I decided to make spicy kale chips, and they are so yummy!!
  • one bunch of kale, or you can get the precut kale in the bag (the bag kind can be a time saver), but I really like it to be fresh
  • avocado oil
  • sea salt
  • red pepper flakes
  • preheat oven to 300 degrees
  • parchment paper / baking sheet
  1. After rinsing the kale I removed the greens from the stems, and placed the kale pieces in a large bowl
  2. Drizzle your avocado oil onto the kale, and then massage the kale until it's coated evenly. I am obsessed with avocado oil, and we rarely use olive oil.
  3. Place the kale pieces on the baking sheet covered in parchment paper
  4. Lightly sprinkle your sea salt, and red pepper flakes onto the kale
  5. Bake for about 20 minutes at 300 degrees, or until they look crunchy
  6. Enjoy!!
These are a great snack, and they are a great snack for your kids too! I just store them in a plastic storage bag, but they normally don't last that long!

Smoothie Love | Freezing Bananas

When I go grocery shopping, I always stock up on bananas. Even though Costco offers organic bananas, I do not recommend them. This was the second time I bought them, but they were all mushy, and bruised. So, instead of throwing them away, I decided to freeze them.

Frozen bananas are a lifesaver when making smoothies!! Just add a frozen banana instead of adding ice! You can also make nice cream with them. I just peeled them, and added them to a freezer bag.

Farmer's Market Haul

I love the fall season at the farmer's market! There are so many great fruits, and veggies that you can stock up on!

Here are a few things that are great to stock up on during the fall:

  • broccoli 
  • sweet potatoes 
  • apples
  • winter squash 
  • herbs
  • onions 
  • pears
  • beets
  • pumpkins 

I picked up all the stuff above for $23! This will last us for the rest of the week. I love making roasted green beans, and broccoli is always good to snack on, or steamed for a meal. I love making spaghetti squash {I will post an easy way to cook your spaghetti squash soon} instead of making actual spaghetti noodles. 

The above farmer's market haul was $31! I really needed to pick up a few things since we were out of town on vacation. I am so glad kale is back at the farmer's market! You can do so many things with kale! It's great in smoothies, and kale chips are awesome!! 

Eating healthy can be hard, but it shouldn't be expensive. I really try to shop around for the best prices, and the farmer's market always has a great deal. Going with cash will always keep you from overspending, and always go with a list! I try to meal plan as much as possible so I am not throwing food away. I like to keep my meals simple, but not boring. I am also excited to put my slow cooker to use!

Staying on Track

It doesn't matter what healthy lifestyle plan you follow, but I do know the only way I can stay on track is meal planning. Sunday's are my rest day, and I take the day to get organized for the week. Since it was Labor Day Weekend, I decided to hold off until yesterday.

If you are looking for an awesome FREE printable check out the Little Coconutty's printable here. I love meal planning, and prepping. It saves me so much time in the mornings, and I don't get the 5pm phone call asking what's for dinner. 

Yesterday I made shaved brussels sprouts with diced pancetta and two crispy fried eggs. It was so easy to make. Trader Joe's sells pre-shredded brussels sprouts - and they are a BIG time saver. I also had some left over diced pancetta that I bought from Wegman's. I just threw the brussels sprouts, pancetta into a pan with some avocado oil. I cooked the brussels sprouts until they were crispy, and fried two eggs. SO EASY.

After taking the morning to meal plan, I went to Wegman's to stock up. My family doesn't eat 100% Paleo, but they do eat clean. My kids LOVE spaghetti. I picked up some quinoa, cottage cheese, and Greek yogurt. I have started to add some Primal items to my meals, but still finding that 80/20 Paleo balance. 

Before starting all the meal planning, I decided to try doing a few headstands. BUT that can be hard while you have a 19-month-old trying to climb you.

Target Haul

Is it bad that the Target employees know me, and I don't even work there? I might have a Target problem. They had so many good deals when I went. The La Croix was on sale 4 / $12, and the Chobani Greek yogurt was on sale 10 / $10. I have never had Greek Yogurt before, but it's really good. I am not a big yogurt fan, but I do like Greek yogurt! I did notice that some of the Chobani flavors used NON-GMO ingredients. Which is a big plus when I buy food for the family.

Also, their Simply Balanced products are great and reasonably priced. I also noticed that some of those products are NON-GMO as well. I love Applegate lunch meat - they are nitrate free, and they are great to snack on when you're on the go. I also found a gluten free cake mix that I cannot wait to make! Annie's BBQ sauce was on sale, so I had to pick up a few for the kids. Even though my family doesn't eat 100% Paleo, they do eat clean. I try to keep it mostly organic, and clean as possible. 

While walking around the store, I found this awesome looking gelato. I didn't buy it, but I will probably try it after hearing how great it is! Because BALANCE.

Dream Chasers Wear Sneakers

If you know me, I have a serious shoe problem. It used to be heels, but it is now sneakers. I found the perfect pair of Nike Kaishi sneakers at DSW online. I was hesitant to buy a pair of Nike's because they never seem to fit my foot perfectly.

These shoes are amazing! They are so comfortable, and they are great to run in! I have been working out in them for a couple of weeks, and have had zero problem. They are really light, and fit really well to my foot. They don't rub or cause blisters. If you are looking for a reasonably priced pair of shoes - these are perfect! AND they would go well with leggings or skinny jeans.

Leopard is a neutral.
