Vitacost Haul

I needed to order some of my favorites from Vitacost, and I wanted to try some new items. We keep all of our personal care products cruelty, and toxic free. Since we eat clean, we also wanted to keep our personal use products clean too. Over a year ago, I threw away all of the chemical, toxic, personal and household products right in the trash.

So here's what I stocked up on this month!

  • Desert Essence Natural Tea Tree Oil & Neem Wintergreen Toothpaste - this is my favorite toothpaste!! 
  • EO Essential Oil Products Everyone Lotion Coconut and Lemon - this lotion makes your skin so smooth - and it last FOREVER. My kids love using it right after their showers 
  • Acure Organics Pure Mint and Echinacea Stem Cell Shampoo & Conditioner - this stuff smells amazing!! I love it, and it makes my hair really soft!  
  • Acure Organics Argan Oil Soap Pumpkin + Calendula - I haven't tried it yet, but it smells amazing! I had to get it since it had pumpkin in it!! 
  • Bragg Organic Raw Apple Cider Vinegar - I mean I had to try this. I have read SO MANY things you can do with apple cider vinegar, so I had to try it!
  • Purely Elizabeth Ancient Grain Oatmeal Gluten Free - after seeing all these yummy oatmeal posts on Instagram, it made me want warm comfort food! 
  • Enjoy Life Semi Sweet Chocolate Mini Chips - I have heard awesome things about this brand, so I picked up a bag of this too. I want to start baking more this fall/winter and these would be perfect to add to Paleo pancakes or waffles!! 
  • Extreme Health USA Organic Dark Chocolate Covered Chia Seeds - chocolate covered chia seeds - do I need to say more?! I cannot wait to top a smoothie with these, or overnight chia seed pudding!! 
  • One With Nature Dead Sea Mineral Soap Lemon Sage - this is another go-to favorite soap of mine. It doesn't dry out my skin, and it last forever! It's better than some of the bigger brands I have tried. Some dry out my skin, and don't last very long.
Don't let switching your beauty care, and household products scare you. I know you might think that it will be more expensive, but it really isn't! The toothpaste is about $3.50, and the shampoo and conditioner was under $8 each. I don't wash my hair daily either. Also, I don't buy kids shampoo, conditioner, or soap. Charlotte and Jackson use the same stuff we use minus toothpaste.

Tailgating // Healthy Snacks

If you know me, you know I love to snack. I was inspired by Nuts.com to come up with a healthy snack for all you football fans! So, I decided to make something that was quick, healthy, and something that everyone can enjoy. Instead of grabbing chips, you can enjoy something loaded full of protein that will keep you full longer.

Chocolate Chip Almond Butter Oatmeal Bites 

  • one cup oats 
  • 1/2 cup almond butter
  • 1/2 cup shredded sweetened coconut 
  • 1/2 mini chocolate chips
  • 1/3 cup honey
  1. Add all the ingredients to a large bowl
  2. Mix all everything together - I used my hands
  3. Once everything is mixed - roll the mixture into bite sized balls
  4. Refrigerate for 30 minuets
  5. Enjoy!

These are a great snack to bring to any tailgate, they don't require any baking, and you don't need much to make them!

Pyrex Meals // Egg White Muffin Cups

I decided to switch up my normal egg muffin cups. Instead of using whole eggs, I opted for egg whites. I found Organic Valley Egg Whites shopping at Wegman's, so I decided to try them out. They were kind of pricey, but they were really good!! 

Egg muffin cups are SUPER EASY to make. They are prefect for grab-and-go meals, and they don't have to be for breakfast either. 

All I did was lined muffin tins with Applegate ham, added some veggies, and poured in the egg whites. I seasoned each muffin tin with a dash of salt, and pepper, and just mixed it around with a fork. I baked them for about 20 minutes at 350 degrees. I had left over oven roasted red potatoes as a side - quick and easy!!

Hiking Virginia // Big Schloss

Sometimes you need to take a break from everything, get up before the sun rises, and go hike. It's one of the most relaxing things I like to do. My friend, and I decided to hike Big Schloss. It's located in the George Washington National Forest in Virginia. It's two miles up, and two miles down. It's kid, and dog friendly, and an easy hike. The views are AMAZING. If you are new to hiking, I really recommend checking this hike out.

Oven Roasted Asparagus

Finally back to my normal routine!! So, I decided to make a ton of food, and I have a TON of recipes to share.

Since it rained a few weekends ago, I had tons of time to spend in my kitchen to cook so much yummy food. I love sharing simple meals. Let's be honest, we are all trying to eat healthy, and sometimes finding the time can be challenging. I love sharing meals that can be done in less than an hour, using simple whole ingredients, and won't break the bank. 

So, I wanted to share on of my favorite sides - oven roasted asparagus. It takes less than five minutes to prep, and is ready in about 20 minutes. I love eating asparagus with so many things. You can have it for breakfast with eggs, and it's a great side to any dinner. It's so healthy too! 

  • one bunch of asparagus, cleaned, and the ends trimmed
  • avocado oil
  • sea salt + pepper
  • lemon slices
  • baking sheet + parchment paper  
  • two garlic cloves chopped
  1. preheat oven to 375 degrees
  2. cover baking sheet with parchment paper
  3. lay asparagus on baking sheet, and drizzle with avocado oil
  4. season with sea salt, pepper, and garlic cloves
  5. top with lemon slices 
  6. bake for 15 - 20 minutes 
  7. enjoy!!

Oven Roasted Rosemary Chicken

Hello!! I made this awesome oven roasted chicken with rosemary, and I wanted to share the recipe! It was super easy to make, and you don't need a lot of ingredients to make it!

  • one whole chicken
  • one small sweet onion diced
  • one lemon, cut into small wedges 
  • rosemary (I used fresh from our local farmer's market)
  • sea salt + pepper
  • avocado oil
  • preheat oven to 425 degrees
  1. Once you have cleaned, rinsed off, and dried the chicken (I just pat the chicken dry with a paper towel), place it on a roasting pan (I use this one here)
  2. Stuff the chicken with the diced onion, and lemon wedges 
  3. Drizzle avocado oil all over the chicken (you can use olive oil, but we prefer avocado oil)
  4. Season the chicken with the salt, pepper, and rosemary
  5. Bake chicken for 60 minutes, or until the juices run clear
  6. Enjoy!!
This is a great comfort meal, and you can even save the left over chicken to make chicken stock!
