Pyrex Meals // Egg White Muffin Cups

I decided to switch up my normal egg muffin cups. Instead of using whole eggs, I opted for egg whites. I found Organic Valley Egg Whites shopping at Wegman's, so I decided to try them out. They were kind of pricey, but they were really good!! 

Egg muffin cups are SUPER EASY to make. They are prefect for grab-and-go meals, and they don't have to be for breakfast either. 



All I did was lined muffin tins with Applegate ham, added some veggies, and poured in the egg whites. I seasoned each muffin tin with a dash of salt, and pepper, and just mixed it around with a fork. I baked them for about 20 minutes at 350 degrees. I had left over oven roasted red potatoes as a side - quick and easy!!
