Spinach Tomato Mushroom Frittata

Sometimes I get bored eating soft boiled eggs. So, I decided to switch up my egg game with a Frittata. It's probably one of the easiest things to make, and you can really add whatever you want to it. This meal is perfect for breakfast, lunch, and dinner! I added a dash of Frank's Hot Sauce - SO GOOD!

  • pie dish
  • large bowl
  • 10 eggs 
  • handful of spinach 
  • 1/2 cup cherry tomatoes cut in half
  • one cup mushrooms - cut in half
  • salt + pepper 
  • avocado oil 
  1. Preheat oven to 350 degrees
  2. Grease your pie dish with avocado oil (or oil of your choice)
  3. Scramble the eggs 
  4. Add all your veggies, salt + pepper
  5. Mix everything together in a large bowl
  6. Pour the mixture into your pie dish
  7. Bake for 20 - 25 minutes (until done)
  8. Enjoy

If you want you can even add sausage, bacon, prosciutto! Just check the ingredients if you want to make it Whole30 approved! 

Simple, and easy!!
