zoodles with chicken sausage // whole30 approved

I get asked a lot if I miss eating pasta. To be honest, I was never a big pasta eater. I don't really care for spaghetti or lasagna. My weakness is tacos, pizza, and the perfect cupcake.

Zoodles are my favorite. I love making them with avocado oil, a little sea salt and pepper, and then topping them with baked salmon, sausage, or shrimp.

This meal was super easy to make, and really filling.

I already meal prepped a bunch of Trader Joe's Spicy Italian Sausages. I baked the whole pack, and keep them in the fridge. They are always great to keep on hand for breakfast, lunch, and dinner. I grabbed one large zucchini, and use my Spiraletti that I found at Target. Once I had spiralized the whole zucchini, I added it to a pan, drizzled with avocado oil, and seasoned with sea salt, and pepper. I cooked the zoodles on medium heat with a handful of cherry tomatoes, until they turned soft, but not too soft. While the zoodles and tomatoes were cooking, I diced up a  TJ's Spicy Italian Chicken Sausage.


Place in a large bowl, or on a plate, and enjoy! This meal is perfect if you are eating low carb high fat meals, and it's all Whole30 approved! If you aren't eating strict paleo, or doing a Whole30 - try adding some goat cheese to this! It would be AMAZING!!
