paleo meals on-the-go

I love eating simple meals. Meals that I can eat on-the-go are even better.

My mornings trying to get two kids out the door are a little hectic. I also commute almost 2.5 hours TO WORK in the mornings. Yep. That's the joy of living in Northern Virginia.


So, as much as I want those awesome smoothie bowls you see on Instagram, or those really fluffy layered pancakes that I drool over, I don't have time do make those. So,I keep it simple, easy, and filling. BUT really yummy. Runny egg yolk with red potatoes, and some crispy bacon is seriously the best. 

Also, let me tell you about those chicken chile lime burgers from Trader Joe's. They are a LIFE SAVER. You can eat them bunless, with a salad, or topped with a fried egg with breakfast. They are perfect for those nights where you don't feel like making a huge meal. They are kid approved too. Win.Win. Here are a few of the meals that I have had on repeat the past couple of weeks.

trader joe's haul // life after whole30's and finding balance

Hello!! I haven't been posting a lot here, or on my Instragram lately. Work has been extremely busy, and I haven't had much time for myself lately. I attempted a Whole30 a month ago, and it only last a few days. I am trying to find balance between eating healthy, and maintaining a healthy lifestyle. After doing a couple of Whole30's, trying to maintain a Paleo lifestyle, I feel like I haven't found that happy balance. Working late, means grabbing stuff that isn't all that great. I could plan ahead, but after working late days, the last thing I want to do sometimes when I get home is meal prepping. I want to spend that time with my family. Now that work is slowing down, I am ready to start fresh again.


So, I have decided to join Weight Watchers, eat mostly Paleo (I am saying NO to gluten, and allowing some dairy), and working hard to drop this weight that I gained. I did WW years ago, and lost 20 pounds, so I would like to try it again while doing my BBG workouts. I think this will hold me accountable too. I want to keep it mostly Paleo - I love how I feel when I eat this way - but I don't want to feel guilty if I want a treat. I hope this will help me find balance too without the guilt.

I have been looking into it for the past couple of weeks, and decided to hit up one of my favorite grocery stores - Trader Joe's. Duh. I stocked up on ALL my favorite foods - while keeping it mostly Paleo. I officially started yesterday. I took my before pictures, and tracked my weight. EEKKK.

I can't wait to share my WW journey with you, while keeping it mostly Paleo. I am hoping to find balance with this!! Anyone else doing WW? How do you like it? Are you less stressed trying to find balance?
