farmers market haul

This is what happens when you go to the farmers market hungry! I am not complaining though. I love supporting my local farmers market, and nothing is better than fresh fruits and veggies. My kids will eat a whole watermelon in one sitting, and they love eating tomatoes whole. 



I was excited to see the squash blossoms! I stocked up on a bunch of stuff for salads, and stuff to make egg muffins, and a spicy frittata with the jalapenos! 

They were offering free slices of the frog skin melon (bottom left corner) - and it's SO GOOD! If you are able to find it at your local farmers market, I really recommend buying one!

avo toast

I have been enjoying a lot of avocado toast lately! My go-to gluten free brand of bread is Canyon Bakehouse Gluten Free Bread. Their bread is dairy free, soy free, and nut free - and delicious. It's not frozen, so it doesn't have that weird texture. I actually found this brand at Target! I love that Target offers a great selection of healthy options for everyone!

Avocado mashed on top of toast is AMAZING. Top it with crushed red pepper flakes, and it's even better!

  • Canyon Bakehouse Gluten Free Mountain White Bread - thee points
  • 1/4 Avocado Raw - two points 
Next time, I will top my avocado toast with a soft boiled egg!

parchment baked salmon

If you are looking to switch up the way you bake salmon, and add extra veggies into your diet, I really recommend parchment baked salmon packets! It was really quick to make, and the cleanup was minimal!

  • parchment paper
  • wild caught salmon
  • avocado oil (or oil of your choice)
  • salt + pepper
  • diced garlic
  • sliced lemon
  • all the veggies you love!
  1. preheat oven to 400 degrees
  2. place veggies on a large piece of parchment paper, and season with salt, pepper, diced garlic, and drizzle with avocado oil (or oil of your choice)
  3. place your wild caught salmon on top of the veggies
  4. season the wild caught salmon with salt, pepper, avocado oil, and top with sliced lemon
  5. fold parchment paper into a packet; folding edges like an accordion
  6. place parchment paper pack on top of a baking sheet
  7. bake at 400 degrees for 20 - 25 minutes; or until fish is flaky  



This is a great meal to make, with minimal cleanup, and it's kid and husband approve! It's also Whole30 approved!

farmer's market haul

I really enjoy our local farmer's market! They have a great selection of fruits and veggies, and all kinds of FRESH food! I went and stocked up recently on all my favorite items. Tomatoes from the farmer's market are my favorite! The peaches are so fresh, you have to eat them in a day or two before they go bad, but they are so good grilled. You could even make a peach salsa, and top it over grilled salmon. 


I was able to pick up all these goodies for less than $15! Zucchini is always great to pick up. I love making zoodles, and or grilling it with other veggies and making kabobs.
